INGREDIENTS: 

200g GREEN BEANS
2-3 SPRING ONONS
1 GARLIC CLOVE 
1tbsp FRESH GINGER 
CHILLIS

(can use fresh, dried or paste as much as you like)
300g HARD TOFU

1 Tbsp VEGETABLE OIL

PINCH OF SALT

SAUCE:
1 Tbsp OYSTER SAUCE
1/2 Tbsp SOY SAUCE
2 Tbsp SAKE
2 Tbsp WATER or SOUP


SESAME OIL
I Tsp CORN STARCH

GREEN BEANS AND TOFU

METHOD:

  1. Clean green beans and chop them in 3cm lengths
     

  2. Finely chop spring onions and fresh chills
     

  3. Grate ginger and garlic
     

  4.  Cut tofu into about 1cm cubes.
     

  5. Preheat a wok with 1 tbsp of vegetable oil with high heat until it smokes, then turn the
    heat down to medium low and add chopped beans with pinch of salt.

     

  6. Toss the beans every now and then, slowly cook for about 5 minuets.
     

  7. Add ginger, garlic and spring onions fry for 1 minuet
     

  8. Add all the sauce ingredients and once the sauce has cooked through add the tofu and sesame oil
    then gently mix them.

     

  9. Once everything is cooked and bubbling add starch mixed with water to thicken the sauce.
