DATE AND WALNUT LOAF

INGREDIENTS: 

  • 250g PITTED DATES

  • 1 CUP OF WATER

  • 100g DARK BROWN SUGAR

  • 1tbsp HONEY

  • 60g UNSALTED BUTTER

  • 1tsp BAKING SODA
     

  • 2 eggs

  • 180g SELF RAISING FLOUR

  • 1 tsp BAKING POWDER

  • 1 tbsp CINNAMON POWDER

  • PINCH OF SALT

  • 100g CHOPPED WALNUTS

METHOD:
 

  1. Chop pitted dates and put them in a small pan with a cup of water then boil and simmer for 4 minutes.
     

  2. In this pan add 100g dark brown sugar, 1tbsp honey and 60g unsalted butter simmer till butter is melt. 
     

  3. Turn the heat off
     

  4. Add 1tsp of baking soda and mix until it becomes bubbly.
     

  5. Set it aside to cool for 15 to 20 minutes.
     

  6. In a large mixing bowl wisk two eggs with an electric beater until it becomes fluffy.
     

  7. Add dates to the mixture and mix well.
     

  8. Add flour, baking powder cinnamon and pinch of salt and mix them gently with a spatula till all are incorporated.
     

  9. Put the batter in lined loaf pan and cover the top with chopped walnuts and press them in gently.
     

  10. Bake in 170 degree oven with a fan setting for about 40 minutes.
